Ground Beef Mac and Cheese

  1. Cook the macaroni el dente and drain.
  2. Brown the Ground Beef: Place in a large skillet (preferably a nonstick skillet) and cook over medium-high heat. The most important part to browning ground beef is using a wooden spoon or heatproof spatula to break up the ground beef into equal-size pieces as it cooks. This ensures that all the ground beef pieces cook evenly.
  3. Saute Peppers and Onions: Heat the oil in a large skillet over medium-high heat. Add the onions, peppers, ¼ teaspoon salt and ¼ teaspoon pepper. Stir every few minutes, until onions are caramelized and peppers are tender and slightly browned, about 15 - 20 minutes.
  4. Preheat the oven to 350°
  5. Into a large roasting pan, add the macaroni, ground beef and sauteed vegetables and 3/4 of the Velveeta cheese. Using a large spoon, mix all the ingredients together.
  6. Place the remaining slices of cheese on top of the beef and macaroni mix. Cover and bake for 1 hour.
